
This comforting dish is a take on the classic Italian soup. Try adding basil for a different twist.

Ingredients:
- 2 (15 oz) can no salt added tomato sauce
- 2 (15 oz) cans no salt added diced tomatoes
- 1 cup low-sodium vegetable or chicken broth
- 1 tablespoon oil
- 1 large onion, chopped
- 1½ cups cubed day-old bread (1½ inch cubes)
- Black pepper, to taste
- Optional: Shredded Parmesan cheese
Directions:
- In a large pot, heat oil.
- Add onions and sauté until soft.
- Add tomato sauce, tomatoes and bread. Cook over medium heat until the sauce begins to bubble and the bread is soft.
- Season with pepper and serve with shredded parmesan cheese if desired.
- Refrigerate leftovers in an airtight container within 2 hours.
