Tasty Tomato and Bread Soup

This comforting dish is a take on the classic Italian soup. Try adding basil for a different twist.

Servings: 6

Ingredients:

  • 2 (15 oz) can no salt added tomato sauce
  • 2 (15 oz) cans no salt added diced tomatoes
  • 1 cup low-sodium vegetable or chicken broth
  • 1 tablespoon oil
  • 1 large onion, chopped
  • 1 1/2 cups cubed day-old bread (1 1/2 inch cubes)
  • Black pepper, to taste
  • Optional: Shredded Parmesan cheese

Directions:

  1. In a large pot, heat oil.
  2. Add onions and sauté until soft. 
  3. Add tomatoes and bread. Cook over medium heat until the sauce begins to bubble and the bread is soft. 
  4. Season with pepper and serve with shredded parmesan cheese if desired.
