
This soup is hearty and will fill you up with delicious Italian sausage, brown rice, and navy beans.

Ingredients:
- 1/2 pound ground Italian sausage
- 2/3 cup uncooked brown rice
- 6 cups low-sodium beef broth
- 1 (15 oz) can navy beans, drained and rinsed
- 1 (15 oz) can diced tomatoes
- 1/4 teaspoon ground black pepper
- 1 (10 oz) box frozen chopped spinach, thawed, drained, and squeezed dry
- Optional: Grated Parmesan cheese
Directions:
- In a medium skillet, cook the sausage until done, with the internal temperature reaching 160°F. Drain or pat dry with paper towels to remove any grease.
- Put the uncooked brown rice, beef broth, beans, tomatoes, black pepper, and spinach in a large pot. Stir to combine and cook on low heat for approximately 45 minutes until the rice is fully cooked and soft.
- Serve with grated Parmesan cheese if desired.
- Refrigerate leftovers in an airtight container within 2 hours.
