Chicken and Potato Onion Soup

This easy soup uses ingredients that you probably already have on hand in your pantry. You can substitute fresh vegetables and chicken, however, be sure to adjust cooking time.

Servings: 4

Ingredients:

  • 1 (16 oz) can cut green beans, drained and rinsed
  • 1 (14 oz) can chicken breast, packed in water drained and rinsed
  • 1 (16 oz) can diced potatoes, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 (16 oz) can diced tomatoes
  • 1/2 packet onion soup mix

Directions:

  1. In a large pot, add all ingredients.
  2. Bring to a boil then turn temperature down to low-medium and simmer 15 minutes.
  3. Refrigerate leftovers in an airtight container within 2 hours.
