
This dip is delicious! The black beans provide protein and fiber while the cream cheese provides a velvety texture with sweet heat from the chipotle sauce.
Servings: 8 (2 tablespoons per serving)
Ingredients:
- 1(15 oz) can black beans, drained and rinsed
- 1/4 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon garlic powder (or 1 clove minced)
- 1 (2.5 oz) jar chipotle peppers in adobo sauce (diced peppers)
- 1/2 medium yellow onion, diced
- 1/4 teaspoon salt
- 8 oz reduced fat cream cheese, softened to room temperature
- 1/3 cup shredded mozzarella cheese
Directions:
- Preheat oven to 400°F.
- In an oven-safe skillet over medium heat, add the beans, chipotle peppers in adobo sauce, black pepper, and cumin, stir to combine, and heat until warm. Once heated, transfer beans to a bowl and set aside.
- Add 2 tablespoons of olive oil to the oven-safe skillet over medium heat. Add onions and a pinch of salt and stir. Cook until soft and translucent, about 5 minutes. Add garlic and cook 1-2 more minutes. Remove pan from heat.
- Add softened cream cheese to onions and stir until melted and mixed together.
- Spread beans on top of cream cheese mixture and sprinkle with mozzarella cheese. Bake 12 to 15 minutes, or until cheese is melted and bubbly.
- Serve with tortilla chips or crackers.
