
Make this warm green beans seasoned with oil and balsamic vinegar, mixed with tomatoes for your next side dish. Add additional vegetables, like onions and peppers, if desired.

Ingredients:
- 1 pound fresh, frozen, or canned green beans
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 plum tomatoes, finely chopped
Instructions:
- In a saucepan, cook the beans tender and crisp. If using fresh, boil in water for 4-5 minutes; if using frozen, boil or steam until heated through; and if using canned heat until warm through. Remove from heat and drain well.
- In a large bowl, whisk together the olive oil, vinegar, garlic, salt and pepper. Add the tomatoes. Add the cooked green beans to the bowl and stir to combine.
- Serve warm or at room temperature.
- Refrigerate leftovers in an airtight container within 2 hours.
