Baked Cauliflower Tots

These tasty baked cauliflower tots are the perfect side dish for any meal. Additional spices such as cayenne, pepper, and oregano can be added based on personal preference. Cauliflower can be coarsely chopped if a grater is not available.

Instructions:

  • 2 cups cauliflower, grated 
  • 1 egg 
  • 3 tablespoons flour 
  • 1⁄4 cup low-fat cheddar cheese, shredded
  • 1⁄4 teaspoon salt

Directions:

  1. Preheat oven to 400 degrees. 
  2. Spray a baking sheet with cooking spray or line with parchment paper or foil. 
  3. Grate cauliflower on large holes of a box grater. 
  4. In a medium bowl, combine cauliflower, egg, flour, cheese, and salt; mix well. 
  5. Press mixture together to make about 15 small balls or logs
  6. Place on the baking sheet with space between each ball or log. 
  7. Bake for 20 minutes or until cooked through. 
  8. For extra crispy tots, put under the broiler an extra 2 minutes. Watch closely to avoid burning.
  9. Refrigerate leftovers in an airtight container within 2 hours.
