Ingredients:
- 1/4 cup apple cider or white-wine vinegar
- 1/4 cup olive oil
- 1 teaspoon sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups broccoli, cut in small florets
- 2 medium carrots, diced small
- 1 large red bell pepper, diced small
- 1 1/2 cups cucumber or zucchini, diced small
- 3 green onions, sliced
- 1 can chickpeas, rinsed and drained
Instructions:
- In a large bowl whisk vinegar, oil, sugar, garlic powder, salt and pepper until well combined.
- Add broccoli, carrots and bell pepper to vinaigrette. Let marinate at least 10 minutes up to 1 hour.
- Add cucumber, green onion and chickpeas to bowl; mix well.
