Very Veggie Salad

Serves 8

Ingredients:

  • 1/4 cup apple cider or white-wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups broccoli, cut in small florets
  • 2 medium carrots, diced small
  • 1 large red bell pepper, diced small
  • 1 1/2 cups cucumber or zucchini, diced small
  • 3 green onions, sliced
  • 1 can chickpeas, rinsed and drained

Instructions:

  1. In a large bowl whisk vinegar, oil, sugar, garlic powder, salt and pepper until well combined.
  2. Add broccoli, carrots and bell pepper to vinaigrette. Let marinate at least 10 minutes up to 1 hour.
  3. Add cucumber, green onion and chickpeas to bowl; mix well.
