Taco Salad

Turn ‘Taco Tuesday’ into ‘Taco Salad Tuesday’ with this healthy recipe.

Servings: 4

Ingredients:

  • 4 cups chopped lettuce
  • 1 cup cooked beans, pulled pork or chicken, or ground beef
  • 2 tomatoes, chopped
  • 1/2 cup corn, canned (drain) or fresh
  • 2-3 green onions, finely chopped
  • 1 cup tortilla chips, roughly broken
  • 1/4 cup shredded cheese
  • 1/4 cup plain Greek yogurt
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Optional additions: chopped cucumber, finely chopped jalapeno pepper, chopped bell pepper, grated carrots, prepared or home-made salsa.

Instructions:

  1. In a large bowl add lettuce, beans, tomatoes, corn, green onions, tortilla chip pieces and cheese; stir to mix well.
  2. In a small bowl whisk together Greek yogurt, lime juice, salt and pepper. Adjust to taste preferences as desired.
  3. Just before serving, pour dressing over salad and toss to coat. Serve immediately. Additional chips on the side are optional.
  4. Refrigerate leftovers in an airtight container within 2 hours.
