
Turn ‘Taco Tuesday’ into ‘Taco Salad Tuesday’ with this healthy recipe.
Servings: 4
Ingredients:
- 4 cups chopped lettuce
- 1 cup cooked beans, pulled pork or chicken, or ground beef
- 2 tomatoes, chopped
- 1/2 cup corn, canned (drain) or fresh
- 2-3 green onions, finely chopped
- 1 cup tortilla chips, roughly broken
- 1/4 cup shredded cheese
- 1/4 cup plain Greek yogurt
- Juice of 1 lime
- Salt and pepper, to taste
- Optional additions: chopped cucumber, finely chopped jalapeno pepper, chopped bell pepper, grated carrots, prepared or home-made salsa.
Instructions:
- In a large bowl add lettuce, beans, tomatoes, corn, green onions, tortilla chip pieces and cheese; stir to mix well.
- In a small bowl whisk together Greek yogurt, lime juice, salt and pepper. Adjust to taste preferences as desired.
- Just before serving, pour dressing over salad and toss to coat. Serve immediately. Additional chips on the side are optional.
- Refrigerate leftovers in an airtight container within 2 hours.
