Easy Coleslaw

Easy coleslaw makes a great side dish for pork, chicken, fish or beef! Try adding chopped apples or cranberries or chopped pecans or sunflowers for a tasty twist.

Servings: 6

Ingredients:

  • 1 bag coleslaw mix (14-16 ounces) or 6 cups thinly sliced cabbage
  • 1/3 cup light mayonnaise
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon vinegar
  • 1/4 teaspoon each salt and pepper

Instructions:

  1. In a large bowl add light mayonnaise, sugar, lemon juice, vinegar, salt and pepper. Whisk together until creamy and blended.
  2. Add cabbage/coleslaw mix and any other add-ins into the bowl. Mix until the coleslaw is fully coated with dressing.
  3. Refrigerate in an airtight container within 2 hours.
