
Don’t have eggs on hand but want egg salad? Try this chickpea “egg” salad alternative.
Servings: 4
Ingredients:
- 1 (15 oz) can chickpeas, drained and rinsed
- 2-3 tablespoons mayonnaise
- 2 tablespoons sweet pickle relish or chopped sweet pickles
- 1 teaspoon dried onion flakes, or 1 tablespoon finely minced fresh onion
- 1/2 cup chopped celery
Directions:
- Place chickpeas in a medium bowl and mash.
- Stir in mayonnaise, pickles, onion, and celery. Mix until well combined.
- Serve with whole grain crackers, pita, bread, or wrap.
- Refrigerate leftovers in an airtight container within 2 hours.
