Chickpea “Egg” Salad

Don’t have eggs on hand but want egg salad? Try this chickpea “egg” salad alternative.

Servings: 4

Ingredients:

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2-3 tablespoons mayonnaise
  • 2 tablespoons sweet pickle relish or chopped sweet pickles
  • 1 teaspoon dried onion flakes, or 1 tablespoon finely minced fresh onion
  • 1/2 cup chopped celery

Directions:

  1. Place chickpeas in a medium bowl and mash.
  2. Stir in mayonnaise, pickles, onion, and celery. Mix until well combined.
  3. Serve with whole grain crackers, pita, bread, or wrap.
  4. Refrigerate leftovers in an airtight container within 2 hours.
