Caesar Salad with Creamy Garlic Dressing

Ditch the store-bought dressing and make this Caesar salad with creamy garlic dressing.

Ingredients:

  • 1 garlic clove, minced or 1/4 teaspoon garlic powder
  • 1/3 cup olive oil
  • 2 tablespoons vinegar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 8 cups chopped romaine lettuce
  • 1/2 cup croutons
  • 2-4 tablespoons Parmesan cheese

Directions:

  1. In a medium bowl, combine garlic, olive oil, vinegar, basil, salt, and black pepper. Whisk to blend. Slowly drizzle in milk while continuing to whisk together until dressing thickens. Set aside.
  2. In a large bowl, add the lettuce and croutons. Drizzle lettuce with dressing to taste and toss well to fully coat. Top with Parmesan cheese.
  3. Any extra dressing keeps for about 1 week in a closed jar in the refrigerator. Shake well if it separates.
  4. Refrigerate leftovers in an airtight container within 2 hours.
