
This salad goes great with tacos, chicken, shrimp, and more. Use any peppers you have on hand.

Ingredients:
- 2 (15 oz) cans black beans, drained and rinsed
- 1 (15 oz) can corn, drained and rinsed
- 3/4 cup red onion, diced
- 1 cup chopped tomato
- 1 cup green or red bell pepper, diced
- 3 tablespoons fresh cilantro, chopped (optional)
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 1/2 teaspoon chili powder
- 3/4 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
Directions
- In a large bowl, combine beans, corn, onion, tomatoes, bell pepper, and cilantro (if using).
- In a small bowl, whisk olive oil, lime juice, chili powder, cumin, salt, pepper, and crushed red pepper flakes (if using) until well combined. Set aside.
- Pour dressing over salad, tossing well to coat the ingredients. Serve at room temperature or cold. This can be a main dish with lettuce or as a side with chips.
