Black Bean and Corn Salad

This salad goes great with tacos, chicken, shrimp, and more. Use any peppers you have on hand.

Servings: 10

Ingredients:

  • 3/4 cup red onion, diced
  • 1 (15 oz) can corn, drained and rinsed
  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 cup chopped tomato
  • 1 cup green or red bell pepper, diced
  • 3 tablespoons fresh cilantro, chopped (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder
  • 3/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)

Directions

  1. In a large bowl combine corn, beans, tomatoes, bell pepper, onion and optional cilantro.
  2. In a small bowl, whisk oil, lime juice, chili powder, cumin, salt, pepper, and optional crushed red pepper flakes until well combined. Set aside.
  3. Pour dressing over salad, tossing well to combine. Serve at room temperature or cold. Can be a main dish with lettuce or as a side with chips.
