Slow Cooker Sweet and Tangy Chicken 

Makes 8 servings

Ingredients

  • 8 skinless and boneless chicken breasts or thighs, cut into 1-inch pieces
  • 8-ounces barbecue sauce
  • 1 (20-ounce) can pineapple chunks, undrained
  • 1 green bell pepper, chopped
  • 1 cup onion, chopped
  • 2 garlic cloves, minced
  • 4 cups cooked rice

Instructions

  1. In a 5-quart slow cooker, add chicken pieces.
  2. In a separate bowl, combine the barbeque sauce, pineapple, green pepper, onion, and garlic.
  3. Pour the vegetable mixture over the chicken and stir to combine. 
  4. Cover and cook on low for 8 to 9 hours or until chicken is tender.  
  5. Serve the chicken with sauce and rice.
