Ingredients
- 8 skinless and boneless chicken breasts or thighs, cut into 1-inch pieces
- 1 cup lower sugar barbecue sauce
- 1 (20 oz) can pineapple chunks in 100% juice or water, undrained
- 1 green bell pepper, chopped
- 1 cup onion, chopped
- 2 garlic cloves, minced
- 4 cups cooked rice
Instructions
- In a 5-quart slow cooker, add chicken pieces.
- In a separate bowl, combine the barbeque sauce, pineapple, green pepper, onion, and garlic.
- Pour the mixture over the chicken and stir to combine.
- Cover and cook on low for 6 to 8 hours or until chicken is cooked through to 165°F.
- Serve the chicken over cooked rice.
