Ingredients
- 1 cup instant brown rice, uncooked
- 1 tablespoon oil
- 1/2 pound ground pork
- 1/2 cup chopped red onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup chopped zucchini
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 3 tablespoons fresh basil, chopped (optional)
Instructions
- Cook rice according to package directions.
- Add oil to a large skillet over medium heat. Add sausage and cook about 5 minutes, until brown and reaches 160°F. Remove sausage from skillet and place on a plate lined with paper towels.
- Add the onion, celery, carrots, Italian seasoning, garlic powder, and salt. Cook until vegetables are tender, about 3-5 minutes. Add zucchini and basil, if using, and cook for another 2-3 minutes.
- Stir in cooked sausage and rice.
- Refrigerate leftovers in an airtight container within 2 hours.
