Ground Pork, Vegetable, and Rice Skillet 

Load up on veggies with this ground pork and vegetable skillet. Swap out any meat or vegetables of your choice.

Ingredients

  • 1 cup instant brown rice, uncooked
  • 1 tablespoon oil
  • 1/2 pound ground pork
  • 1/2 cup chopped red onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup chopped zucchini
  • 1/2 teaspoon Italian seasoning 
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 3 tablespoons fresh basil, chopped (optional)

Instructions

  1. Cook rice according to package directions.
  2. Add oil to a large skillet over medium heat. Add sausage and cook about 5 minutes, until brown and reaches 160°F. Remove sausage from skillet and place on a plate lined with paper towels.
  3. Add the onion, celery, carrots, Italian seasoning, garlic powder, and salt. Cook until vegetables are tender, about 3-5 minutes. Add zucchini and basil, if using, and cook for another 2-3 minutes.
  4. Stir in cooked sausage and rice.
  5. Refrigerate leftovers in an airtight container within 2 hours.
