Half Veggie Turkey Burgers

Save money by swapping beans or lentils for half the meat in this tasty burger recipe. Adjust seasonings to your taste preference and top with your favorite burger condiments.

Ingredients

  • 3 cups cooked lentils or beans
  • 1 medium bell pepper, diced
  • 1 pound lean ground turkey
  • 1 large egg
  • 1 teaspoon salt 
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 8 whole wheat hamburger buns 

Instructions

  1. In a large bowl, using a fork or potato masher, mash half of the lentils or beans, keeping the other half whole.
  2. Mix lentils or beans, bell pepper, ground meat, and egg with your hands. Season with salt, pepper, and garlic powder.
  3. Form the meat and bean mixture into 8 patties. Note: If time allows, refrigerate for 30 minutes before forming patties to help form and set patties.
  4. Heat a 12-inch skillet to medium-high. Sear patties until dark brown on one side, then flip them and sear on the other side to 165°F. 
  5. Serve on toasted buns with your favorite condiments.  
  6. Refrigerate leftovers in an airtight container within 2 hours.
