Half Veggie Burgers

Makes 8 servings 

Ingredients

  • 3 cups lentils or beans, cooked
  • 1 cup bell pepper, diced
  • 1 pound ground pork or ground beef
  • 1 large egg
  • 1 teaspoon salt 
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder.
  • 8 hamburger buns 

Instructions

  1. In a large bowl, mix lentils, bell pepper, ground meat, and egg with your hands.  Season with salt, pepper, and garlic powder.
  2. Form meat mixture into 8 patties.
  3. Heat a 12 inch skillet to medium high.  Sear patties until dark brown on one side, then flip them and sear on the other side to 160 F. 
  4. Serve on toasted buns with your favorite condiments.  
  5. Refrigerate any leftovers within 2 hours.
