Chorizo and White Bean Ragu 

Adding beans to any dish adds fiber, protein, and important vitamins and minerals. Serve alongside your favorite vegetables or try sauteed zucchini!

Ingredients

  • 1 tablespoon oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced 
  • 1/2 pound chorizo or other sausage
  • 1 (28 oz) can crushed tomatoes.
  • 2 (15 oz) cans cannellini or navy beans, drained and rinsed
  • 1 tablespoon Italian seasoning 
  • 3 cups cooked whole wheat pasta
  • Shredded parmesan for topping (optional)

Instructions

  1. In a large pot over medium heat, heat the oil. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add garlic and chorizo, and sauté for about 5 minutes, or until it reaches 160°F.
  3. Add tomatoes, beans, and Italian seasoning. Simmer until the sauce is thick, about 10 minutes.
  4. To serve, place 1/2 cup of pasta in a bowl and top with sauce. Top with shredded parmesan if desired.
  5. Refrigerate leftovers in an airtight container within 2 hours.
