
Makes 6 cups
Ingredients
- 2 tablespoons cooking oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 pound chorizo or other sausage
- 1 28 ounce can crushed tomatoes.
- 2 cans cannellini or navy beans, rinsed and drained
- ½ teaspoon Italian seasoning
Instructions
- In a large pot over medium heat, heat cooking oil. Add chopped onion and cook until translucent, about 5 minutes.
- Add garlic and chorizo, and sauté for about 5 minutes.
- Add tomatoes, beans, and Italian seasoning. Simmer until the sauce is thick, about 10 minutes.
- Serve with grated Parmesan cheese over pasta or polenta
- Refrigerate any leftovers within 2 hours.
