Chorizo and White Bean Ragu 

Makes 6 cups

Ingredients

  • 2 tablespoons cooking oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced 
  • 1 pound chorizo or other sausage
  • 1 28 ounce can crushed tomatoes.
  • 2 cans cannellini or navy beans, rinsed and drained
  • ½ teaspoon Italian seasoning 

Instructions

  1. In a large pot over medium heat, heat cooking oil.  Add chopped onion and cook until translucent, about 5 minutes.
  2. Add garlic and chorizo, and sauté for about 5 minutes.
  3. Add tomatoes, beans, and Italian seasoning.  Simmer until the sauce is thick, about 10 minutes.
  4. Serve with grated Parmesan cheese over pasta or polenta
  5. Refrigerate any leftovers within 2 hours.
