Carrot Cookies

Sweet, soft, and just a little sneaky—these carrot cookies bake veggies right into a tasty treat everyone will love!

Servings: 30

Instructions:

  • 1/2 cup butter, room temperature
  • 3/4 cup honey 
  • 1 ½ cups grated raw carrot 
  • 2 egg whites, well beaten
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder 
  • 1/4 teaspoon baking soda 
  • 1/4 teaspoon salt 
  • 1 teaspoon cinnamon 
  • 2 cups quick cooking oats, uncooked 
  • 1 cup regular or golden raisins 

Ingredients:

  1. Preheat oven to 350°F. Lightly grease 2 baking sheets.  
  2. In a large bowl, cream together the butter and honey. Then stir in the carrots and egg whites. 
  3. In a separate bowl, stir together the flour, baking powder, baking soda, salt, cinnamon, oatmeal and raisins.
  4. Gradually stir flour-oatmeal mixture into creamed mixture, just until all flour is mixed. Do not over mix.
  5. Drop from a teaspoon onto a greased baking sheet.  Flatten slightly and bake for 15 minutes, or until lightly browned.
