Carrot Cookies

Notes:

Makes 30 servings, 1 cookie each.

Use a fork to slightly flatten the cookies.

Instructions:

  • 1/2 cup butter, room temperature
  • 1 cup honey 
  • 1 cup grated raw carrot 
  • 2 egg whites, well beaten
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder 
  • 1/4 teaspoon baking soda 
  • 1/4 teaspoon salt 
  • 1 teaspoon cinnamon 
  • 2 cups quick cooking oats, uncooked 
  • 1 cup raisins 

Ingredients:

  1. Preheat oven to 350°F.  Lightly grease 2 baking sheets.  
  2. In a large bowl, cream together the margarine and honey. 
  3. Stir in the carrots and egg whites. 
  4. In a separate bowl, stir together the flour, baking powder, baking soda, salt, cinnamon, oatmeal and raisins.
  5. Gradually stir flour-oatmeal mixture into creamed mixture, just until all flour is mixed. Do not over mix.
  6. Drop from a teaspoon onto a greased baking sheet.  Flatten slightly and bake at 350°F for 15 minutes, or until lightly browned.
