No-Bake Oatmeal Peanut Butter Cookies

Makes 18 servings, 2 cookies each.

Notes:  

  • The cocoa powder can be eliminated.
  • Any milk can be used, nutritional value is based on 1% milk.

Ingredients:

  • 1 cup sugar 
  • 1/4 cup 1% milk 
  • 1/4 cup margarine 
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract 
  • 1/4 cup peanut butter 
  • 2 cups dry oats

Instructions:

  1. In a saucepan, combine sugar, milk, margarine and cocoa powder and bring to a boil stirring frequently. 
  2. Remove from heat and add the vanilla and peanut butter and stir until peanut butter is melted. 
  3. Add the oats and stir well. 
  4. Drop by teaspoonfuls onto a cookie sheet covered with waxed paper or parchment paper. 
  5. Chill for 1 hour.
