No-Bake Oatmeal Peanut Butter Cookies

Makes 18 servings, 2 cookies each.

Notes:  

  • The cocoa powder can be eliminated.
  • Any milk can be used, nutritional value is based on 1% milk.

Ingredients:

  • 1 cup sugar 
  • 1/4 cup 1% milk 
  • 1/4 cup margarine 
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract 
  • 1/4 cup peanut butter 
  • 2 cups dry oats

Instructions:

  1. In a saucepan, combine sugar, milk, margarine and cocoa powder and bring to a boil. 
  2. Remove from heat and stir in the vanilla and peanut butter until peanut butter is melted. 
  3. Add the oats and stir well. 
  4. Drop by teaspoonfuls onto a cookie sheet covered with waxed paper or parchment paper. 
  5. Chill for 1 hour.
