Easy Apple Crisp

Makes 6 servings.

Ingredients:

  • 6 apples, peeled, cored and chopped (6-7 cups)
  • 2 tablespoons sugar
  • 3/4 teaspoon cinnamon 
  • 1-½ teaspoon lemon juice
  • 1/2 cup sugar

Topping

  • 1 cup light brown sugar 
  • 3/4 cup old fashioned oats 
  • 3/4 cup flour 
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 1/2 cup cold butter, cut into small cubes

Instructions:

  1. Preheat oven to 350 F.
  2. Grease an 8×8 baking dish.  
  3. In a mixing bowl, add chopped apples, sugar, 3/4 teaspoon cinnamon, and lemon juice.  Stir to combine, then transfer to baking dish.
  4. In a separate mixing bowl, add topping ingredients.  Use two forks or a pastry cutter to cut the butter into the oat mixture until mixture forms pea sized clumps.
  5. Spread topping evenly over apples in the baking dish. 
  6. Bake 40-50 minutes, until golden brown and bubbly.
  7. Refrigerate any leftovers within 2 hours.
