Sweet Potato Hash

Makes 6 one cup servings

Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced 
  • 8 ounces breakfast sausage
  • 1/2 tablespoon cooking oil 
  • 1/2 teaspoon salt
  • 1/2  teaspoon garlic powder
  • 1/2  teaspoon paprika 
  • 1/2  teaspoon pepper

Instructions:

  1. Wash and dice sweet potatoes into 1-inch cubes.
  2. In a large skillet on medium heat, crumble the breakfast sausage and cook until lightly browned. Add diced onion and continue cooking until onion is translucent, about 5 minutes.  Remove to a plate and set aside.
  3. Add cooking oil, diced sweet potatoes, dice bell pepper, and seasonings to the pan. Cook over medium heat until potatoes are soft, about 10-12 minutes, stirring occasionally. 
  4. Add cooked sausage and onions back into the skillet and combine with the sweet potatoes.  Cook for 2 more minutes.
  5. Serve with fresh parsley, sliced avocado, or your favorite toppings.
  6. Refrigerate leftovers in an airtight container within 2 hours.
