
Sweet potatoes are a nutritious option to add to your morning meal. Loaded with fiber, they will keep you feeling full all morning.

Ingredients:
- 2 medium sweet potatoes, diced
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 8 oz breakfast sausage
- 1/2 tablespoon cooking oil
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon pepper
Instructions:
- Wash and dice sweet potatoes into 1-inch cubes.
- In a large skillet on medium heat, crumble the breakfast sausage and cook until lightly browned and reaches 155°F. Add diced onion and continue cooking until onion is translucent, about 5 minutes. Transfer to a bowl and set aside.
- Add cooking oil, diced sweet potatoes, dice bell pepper, and seasonings to the pan. Cook over medium heat until potatoes are soft, about 10-12 minutes, stirring occasionally.
- Add cooked sausage and onions back into the skillet and combine with the sweet potatoes. Cook for 2 more minutes or until the mixture is combined and heated through.
- Serve as is or with fresh parsley, sliced avocado, or your favorite toppings.
- Refrigerate leftovers in an airtight container within 2 hours.
