
Have peanut butter and jelly for breakfast in these easy pb&j granola bars.
Makes 12 bars
Ingredients:
- 3 cups rolled oats or 2 cups rolled oats and 1 cup crisp rice cereal
- 1/2 cup peanut butter
- 1/2 cup jelly or jam, divided
- 1/4 cup water
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350°F. Grease an 8×11-inch baking pan with nonstick cooking spray.
- In a large bowl, add the oats (or oats and crisp rice cereal) and set aside.
- In a small saucepan over low heat, add peanut butter, 1/4 cup jelly, water, and salt. Stir until smooth, about 2-3 minutes.
- Pour the saucepan mix into the bowl of oats, and mix until all the oats are coated and sticky.
- Place the mixture into the greased baking pan. Press into an even layer. [Tip: Spray your hands with nonstick cooking spray to easily press into the pan.] Spread the remaining 1/4 cup jelly over the top.
- Bake for 25 minutes, until the edges are toasty and brown.
- Cool completely before slicing. Slice into 12 bars.
- Refrigerate leftovers in an airtight container.
