Peanut Butter and Jelly Granola Bars 

Have peanut butter and jelly for breakfast in these easy pb&j granola bars.

Makes 12 bars

Ingredients:

  • 3 cups rolled oats or 2 cups rolled oats and 1 cup crisp rice cereal
  • 1/2 cup peanut butter
  • 1/2 cup jelly or jam, divided
  • 1/4 cup water 
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F.  Grease an 8×11-inch baking pan with nonstick cooking spray.
  2. In a large bowl, add the oats (or oats and crisp rice cereal) and set aside.
  3. In a small saucepan over low heat, add peanut butter, 1/4 cup jelly, water, and salt. Stir until smooth, about 2-3 minutes.
  4. Pour the saucepan mix into the bowl of oats, and mix until all the oats are coated and sticky.
  5. Place the mixture into the greased baking pan. Press into an even layer. [Tip: Spray your hands with nonstick cooking spray to easily press into the pan.] Spread the remaining 1/4 cup jelly over the top.
  6. Bake for 25 minutes, until the edges are toasty and brown.
  7. Cool completely before slicing. Slice into 12 bars.
  8. Refrigerate leftovers in an airtight container.
