Ingredients:
- 2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 cup sugar
- 1/2 teaspoon salt
- 2 cups grated carrots
- 1/2 cup raisins
- 1 apple, grated
- 3 eggs
- 1 cup oil
- 2 teaspoons vanilla extract
Directions:
- Preheat oven to 350ᵒ degrees F. Grease the bottom of muffin cups or use liners.
- In a large bowl, sift flour, baking soda, salt, cinnamon, and sugar together.
- Stir in carrots, raisins, nuts, coconut, and apple into flour mixture.
- In a small bowl, combine eggs, oil, and vanilla. Stir into flour mixture. Be careful not to overmix.
- Fill 2 dozen muffin cups ¾ full.
- Bake for 20 to 25 minutes, or until toothpick comes out clean.
