Morning Glory Muffins

No one will call twice when these sunny muffins are on the breakfast menu. Quick to prepare, sweet, moist, and nutritious!

Ingredients:

  • 2 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 cups grated carrots
  • 1/2 cup raisins
  • 1 apple, grated
  • 3 eggs
  • 1 cup oil
  • 2 teaspoons vanilla extract

Directions:

  1. Preheat oven to 350ᵒ degrees F. Grease the bottom of muffin cups or use liners.
  2. In a large bowl, sift flour, baking soda, salt, cinnamon, and sugar together.
  3. Stir in carrots, raisins, nuts, coconut, and apple into flour mixture.
  4. In a small bowl, combine eggs, oil, and vanilla. Stir into flour mixture. Be careful not to overmix.
  5. Fill 2 dozen muffin cups ¾ full.
  6. Bake for 20 to 25 minutes, or until toothpick comes out clean.
