Morning Glory Muffins

No one has to yell twice for breakfast when these sunny muffins are on the menu. Quick to prepare, sweet, moist, and nutritious!

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 cups grated carrots
  • 1/2 cup raisins
  • 1 apple, grated
  • 3 eggs
  • 1 cup oil
  • 2 teaspoons vanilla extract

Directions:

  1. Preheat oven to 350ᵒF. Grease the bottom of muffin cups or use muffin liners.
  2. In a large bowl, mix flour, baking soda, cinnamon, sugar, and salt together.
  3. Stir in carrots, raisins, and apple into the flour mixture.
  4. In a small bowl, whisk eggs, oil, and vanilla. Working in small batches, stir the egg mixture into the flour mixture. Be careful not to overmix!
  5. Fill 2 dozen muffin cups about 3/4 full.
  6. Bake for 20 to 25 minutes, or until toothpick comes out clean.
