Easy Tortilla Breakfast Pizza

Breakfast is ready in no time with this easy tortilla breakfast pizza. Substitute your favorite meat or make it with veggies only.

Ingredients:

  • 1 tablespoon cooking oil 
  • 1/2 cup onion, diced
  • 1 cup green bell pepper, diced
  • 1/2 cup ham, diced
  • 6 large eggs
  • 1 teaspoon hot sauce (optional)
  • 2 tablespoons milk 
  • 4 (8 inch) whole wheat tortillas 
  • 1/2 cup shredded cheese

Instructions:

  1. Preheat oven to 425°F.
  2. In a skillet on medium heat, add 1 tablespoon cooking oil. Add onion, pepper, and ham, and cook until vegetables are tender.
  3. In a large bowl, whisk together eggs, milk, and hot sauce (if using). Add to the skillet.
  4. Cook until eggs are light and fluffy, stirring occasionally.
  5. Place whole wheat tortillas on a sheet pan. Spray with nonstick cooking spray. Divide the cooked egg mixture evenly onto each tortilla.
  6. Sprinkle cheese evenly over the eggs on each tortilla.
  7. Place tortillas in the oven and bake for 5-8 minutes, or until cheese is melted. Serve warm.
  8. Refrigerate leftovers in an airtight container within 2 hours.
