
Makes 4 servings
Ingredients:
- 2 tablespoons cooking oil
- 1/2 cup onion, diced
- 1 cup green bell pepper, diced
- 1 cup ham, diced
- 8 large eggs
- 1 teaspoon hot sauce (optional)
- 2 tablespoons milk
- 4 whole wheat tortillas
- 1 cup shredded cheese
Instructions:
Preheat oven to 425° F.
- In a skillet on medium heat, add 1 tablespoon cooking oil. Add onion, pepper, and ham, and cook until tender.
- In a large bowl, whisk together eggs, milk, and hot sauce (if using). Add to the skillet.
- Cook until eggs are light and fluffy, stirring occasionally.
- Place whole wheat tortillas on a sheet pan. Brush each tortilla with remaining cooking oil. Scoop 3/4 cup cooked egg mixture on each tortilla.
- Sprinkle 1/4 cup cheese over the eggs on each tortilla.
- Place tortillas in the oven and bake for 5-8 minutes, or until cheese is melted. Serve warm.
- Refrigerate leftovers in an airtight container within 2 hours.
