Easy Tortilla Breakfast Pizza

Makes 4 servings

Ingredients:

  • 2 tablespoons cooking oil 
  • 1/2 cup onion, diced
  • 1 cup green bell pepper, diced
  • 1 cup ham, diced
  • 8 large eggs
  • 1 teaspoon hot sauce (optional)
  • 2 tablespoons milk 
  • 4 whole wheat tortillas 
  • 1 cup shredded cheese

Instructions:

Preheat oven to 425° F.

  1. In a skillet on medium heat, add 1 tablespoon cooking oil.  Add onion, pepper, and ham, and cook until tender.
  2. In a large bowl, whisk together eggs, milk, and hot sauce (if using).  Add to the skillet.
  3. Cook until eggs are light and fluffy, stirring occasionally.
  4. Place whole wheat tortillas on a sheet pan.  Brush each tortilla with remaining cooking oil.  Scoop 3/4 cup cooked egg mixture on each tortilla.
  5. Sprinkle 1/4 cup cheese over the eggs on each tortilla.
  6. Place tortillas in the oven and bake for 5-8 minutes, or until cheese is melted. Serve warm.
  7. Refrigerate leftovers in an airtight container within 2 hours.
