Cheddar Sausage Cornbread Muffins 

Makes 12 muffins

Ingredients:

  • 2 large eggs
  • 2 boxes Jiffy corn muffin mix
  • 2 cups cooked sausage
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 small jalapeno pepper, seeded and diced
  • 2 tablespoons butter, melted

Instructions:

  1. Preheat oven to 400° F. Prepare a 12-cup muffin tin with nonstick cooking spray or muffin liners. 
  2. In a large mixing bowl, add eggs and beat slightly.
  3. Add muffin mix, sausage, cheese, sour cream, milk, and jalapeño, and stir until just combined.
  4. Pour batter evenly into the prepared muffin tin.
  5. Bake for 15 to 18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  6. Remove from the oven, and brush tops with melted butter.  Cool until ready to serve.
  7. Store leftovers in an airtight container.
