
These savory cheddar sausage cornbread muffins are the perfect addition to your breakfast.

Ingredients:
- 2 large eggs
- 2 boxes corn muffin mix
- 2 cups cooked sausage
- 1 cup shredded cheddar cheese
- 1/2 cup nonfat plain Greek yogurt
- 1/2 cup milk
- 1 small jalapeno pepper, seeded and diced
- 2 tablespoons butter, melted
Instructions:
- Preheat oven to 400°F. Prepare a 12-cup muffin tin with nonstick cooking spray or muffin liners.
- In a large mixing bowl, add eggs and beat slightly.
- Add muffin mix, sausage, cheese, Greek yogurt, milk, and jalapeño, and stir until just combined.
- Pour batter evenly into the prepared muffin tin.
- Bake for 15 to 18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven, and brush tops with melted butter. Cool until ready to serve.
- Store leftovers in an airtight container.
