Sweet Potato Breakfast Hash

Sweet potatoes are a nutritious option to add to your morning meal. Loaded with fiber, they will keep you feeling full all morning. Add an egg on top for even more protein and nutrition!

Ingredients:

  • 2 medium sweet potatoes, diced
  • 8 oz breakfast sausage
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced 
  • 1/2 tablespoon cooking oil 
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika 
  • 1/2 teaspoon black pepper

Instructions:

  1. Wash and dice sweet potatoes into 1-inch cubes. Set aside.
  2. In a large skillet on medium heat, crumble the breakfast sausage and cook until cooked and brown. Add diced onion and continue cooking until onion is translucent, about 5 minutes. Transfer to a bowl and set aside.
  3. Add cooking oil, diced sweet potatoes, diced bell pepper, salt, garlic powder, paprika, and black pepper to the pan. Cook over medium heat until potatoes are soft, about 10-12 minutes, stirring occasionally. 
  4. Add cooked sausage and onions back into the skillet and combine with the sweet potatoes.  Cook for 2 more minutes or until the mixture is combined and heated through.
  5. Serve as is or with fresh parsley, sliced avocado, or your favorite toppings.
  6. Refrigerate leftovers in an airtight container within 2 hours.
