Skillet Chili Mac and Cheese

This skillet chili mac and cheese comes together in no time for an easy weeknight meal.

Ingredients

  • 1 pound ground beef
  • 1 (15 oz) can chili beans in chili sauce
  • 1 cup salsa
  • 1 cup water or reduced sodium beef broth
  • 1 cup cheddar cheese
  • 3 cups cooked macaroni
  • 1/2 cup cilantro, chopped

Directions

  1. Heat a large skillet over medium heat. Add ground beef and cook for 8-10 minutes, breaking up meat as it cooks. Meat is cooked when it reaches 160°F.
  2. Stir in chili beans, salsa, and water or beef broth. Bring to a boil, then reduce heat to simmer for 5 minutes, or until the sauce slightly thickens.
  3. Add cheese and stir until melted.
  4. Add cooked macaroni and stir until fully coated and pasta is heated through.
  5. Top with chopped cilantro before serving.
  6. Refrigerate leftovers in an airtight container within 2 hours.
