
Cucumbers are a low calorie, high water food that are a great veggie to have fun experimenting with flavors.

Instructions:
- 1 English cucumber or 2 to 3 small cucumbers (seeds removed)
- 1/4 cup thinly sliced onion
- 1 green onion, chopped
- 1/4 teaspoon garlic powder
- 2 tablespoons low sodium soy sauce
- 1/2 teaspoon hot pepper flakes, optional
- 1 teaspoon sugar
- 2 teaspoons sesame seeds, optional
Ingredients:
- Cut the cucumber lengthwise in half and cut diagonally into thin slices.
- Put the cucumber into a large bowl. Add the onion, green onion, garlic powder, soy sauce, hot pepper flakes, and sugar.
- Mix well with a spoon until the sugar is well dissolved. If desired, serve topped with sesame seeds.
- Refrigerate leftovers in an airtight container within 2 hours.
