Flourless Peanut Butter Cookies

Try these simple, gluten-free peanut butter cookies. Crunchy peanut butter works too.

Servings: 16

Ingredients:

  • 1 large egg, room temperature, beaten 
  • 1 cup sugar 
  • 1 cup creamy peanut butter

Instructions:

  1. Preheat oven to 350°F. 
  2. In a large bowl, mix all ingredients. 
  3. Roll a level tablespoon of dough into a ball. Place on an ungreased baking sheet; flatten with a fork. Repeat until the dough is all used.
  4. Bake until crisp, 12-15 minutes. Remove to a wire rack to cool.
