Easy Apple Crisp

Makes 6 servings.

Ingredients:

  • 6 apples, peeled and chopped (6-7 cups)
  • 2 tablespoons sugar
  • ¾ teaspoon cinnamon 
  • 1-½ teaspoon lemon juice
  • ½ cup sugar
  • 1 teaspoon cinnamon 

Topping

  • 1 cup light brown sugar 
  • ¾ cup old fashioned oats 
  • ¾ cup flour 
  • 1 teaspoon cinnamon
  • Pinch of salt
  • ½ cup cold butter, cut into small cubes

Instructions:

  1. Preheat oven to 350 F.
  2. Grease an 8×8 baking dish. Line the bottom of 13x9x2 dish with 6 slices of bread. 
  3. In a mixing bowl, add chopped apples, sugar, ¾ teaspoon cinnamon, and lemon juice.  Stir to combine, then transfer to baking dish.
  4. In a separate mixing bowl, add topping ingredients.  Use two forks to cut the butter into the oat mixture until mixture forms pea sized clumps.
  5. Spread topping evenly over apples in the baking dish. 
  6. Bake 40-50 minutes, until golden brown and bubbly.
  7. Refrigerate any leftovers within 2 hours.
