Very Veggie Salad

Load up on your veggies with this simple salad. Swap out your favorite veggies, seasonings, or beans.

Servings: 8

Ingredients:

  • 1/4 cup apple cider or white-wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups broccoli, cut in small florets
  • 2 medium carrots, diced small
  • 1 large red bell pepper, diced small
  • 1 1/2 cups cucumber or zucchini, diced small
  • 3 green onions, sliced
  • 1 can chickpeas, rinsed and drained

Instructions:

  1. In a large bowl whisk vinegar, olive oil, sugar, garlic powder, salt and black pepper until well combined.
  2. Add broccoli, carrots, and bell pepper to the vinaigrette. Let marinate at least 10 minutes up to 1 hour.
  3. Add cucumber, green onion and chickpeas to bowl; mix well.
  4. Serve chilled.
  5. Refrigerate leftovers in an airtight container within 2 hours.
