
Ditch the store-bought dressing and make this Caesar salad with creamy garlic dressing.
Servings: 4
Ingredients:
- 1 garlic clove, minced or 1/4 teaspoon garlic powder
- 1/3 cup olive oil
- 2 tablespoons vinegar
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup milk
- 8 cups romaine lettuce, large chopped
- 1/2 cup croutons
- 2-4 tablespoons parmesan cheese
Directions:
- In a medium bowl combine garlic, oil, vinegar, basil, salt and pepper. Whisk to blend. Slowly drizzle in milk while continuing to whisk together until dressing thickens. Set aside.
- In a large bowl pour lettuce and croutons. Add dressing to taste and toss well to coat lettuce. Top with parmesan cheese.
- Any extra dressing keeps for about 1 week in a closed jar in the refrigerator. Shake well if it separates.
