Caesar Salad with Creamy Garlic Dressing

Ditch the store-bought dressing and make this Caesar salad with creamy garlic dressing.

Servings: 4

Ingredients:

  • 1 garlic clove, minced or 1/4 teaspoon garlic powder
  • 1/3 cup olive oil
  • 2 tablespoons vinegar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 8 cups romaine lettuce, large chopped
  • 1/2 cup croutons
  • 2-4 tablespoons parmesan cheese

Directions:

  1. In a medium bowl combine garlic, oil, vinegar, basil, salt and pepper. Whisk to blend. Slowly drizzle in milk while continuing to whisk together until dressing thickens. Set aside.
  2. In a large bowl pour lettuce and croutons. Add dressing to taste and toss well to coat lettuce. Top with parmesan cheese.
  3. Any extra dressing keeps for about 1 week in a closed jar in the refrigerator. Shake well if it separates.
