Black Bean and Corn Salad

This salad goes great with tacos, chicken, shrimp, and more. Use any peppers you have on hand.

Servings: 10

Ingredients:

  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 (15 oz) can corn, drained and rinsed
  • 3/4 cup red onion, diced
  • 1 cup chopped tomato
  • 1 cup green or red bell pepper, diced
  • 3 tablespoons fresh cilantro, chopped (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1/2 teaspoon chili powder
  • 3/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional)

Directions

  1. In a large bowl, combine beans, corn, onion, tomatoes, bell pepper, and cilantro (if using).
  2. In a small bowl, whisk olive oil, lime juice, chili powder, cumin, salt, pepper, and crushed red pepper flakes (if using) until well combined. Set aside.
  3. Pour dressing over salad, tossing well to coat the ingredients. Serve at room temperature or cold. This can be a main dish with lettuce or as a side with chips.
