Chipotle Black Bean Dip

This dip is delicious! The black beans provide protein and fiber while the cream cheese provides a velvety texture with sweet heat from the chipotle sauce.

Servings: 8 (2 tablespoons per serving)

Ingredients:

  • 1(15 oz) can black beans, drained and rinsed
  • 1/4 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder (or 1 clove minced)
  • 1 (2.5 oz) jar chipotle peppers in adobo sauce, diced
  • 1 tablespoon oil
  • 1/2 medium yellow onion, diced
  • 1/4 teaspoon salt
  • 8 oz reduced fat cream cheese, softened to room temperature
  • 1/3 cup shredded mozzarella cheese

Directions:

  1. Preheat oven to 400°F.
  2. In an oven-safe skillet over medium heat, add the beans, chipotle peppers in adobo sauce, black pepper, cumin, and garlic, stir to combine, and heat until warm. Once heated, transfer beans to a bowl and set aside.
  3. Add 1 tablespoon of oil to the oven-safe skillet over medium heat.  Add onions and salt and stir. Cook until soft and translucent, about 5 minutes. Remove pan from the heat.
  4. Add softened cream cheese to onions and stir until melted and mixed together.
  5. Spread beans on top of cream cheese mixture and sprinkle with mozzarella cheese. Bake 12 to 15 minutes, or until cheese is melted and bubbly.
  6. Serve with tortilla chips or crackers.
