
No one has to yell twice for breakfast when these sunny muffins are on the menu. Quick to prepare, sweet, moist, and nutritious!

Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 cup sugar
- 1/2 teaspoon salt
- 2 cups grated carrots
- 1/2 cup raisins
- 1 apple, grated
- 3 eggs
- 1 cup oil
- 2 teaspoons vanilla extract
Directions:
- Preheat oven to 350ᵒF. Grease the bottom of muffin cups or use muffin liners.
- In a large bowl, mix flour, baking soda, cinnamon, sugar, and salt together.
- Stir in carrots, raisins, and apple into the flour mixture.
- In a small bowl, whisk eggs, oil, and vanilla. Working in small batches, stir the egg mixture into the flour mixture. Be careful not to overmix!
- Fill 2 dozen muffin cups about 3/4 full.
- Bake for 20 to 25 minutes, or until toothpick comes out clean.
