Healthy Beef Ramen Noodles

Makes 4 servings 

Ingredients

  • 1 tablespoon cooking oil
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 2 cups broccoli florets (frozen or fresh)
  • 1 pound ground beef
  • 2 packets ramen noodles, discard seasoning packet
  • Salt & pepper

Sauce

  • ¼ cup soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons hot sauce or siracha
  • 1 teaspoon garlic powder
  • 1 green onion, chopped

Instructions

  1. In a small bowl, whisk together soy sauce, brown sugar, vinegar, hot sauce, and garlic powder.
  2. In a medium saucepan, bring water to a boil.  Add ramen noodles and cook until tender, 2 minutes.  Drain.
  3. In a large skillet on medium heat, heat oil.  Add onions,pepper, and broccoli, and cook until tender, 5 minutes.  Remove from pan.
  4. Add ground beef to the pan, season with salt and pepper, and cook until no longer pink, about 5 minutes.
  5. Drain fat and return vegetables back to the skillet.
  6. Add cooked ramen noodles to skillet, then add sauce.  Toss until combined.  Garnish with green onions and serve.
  7. Refrigerate any leftovers within 2 hours.
