Half Veggie Turkey Burgers

Save money by swapping beans or lentils for half the meat in this tasty burger recipe.

Servings: 8 

Ingredients

  • 3 cups cooked lentils or beans
  • 1 medium bell pepper, diced
  • 1 pound lean ground turkey
  • 1 large egg
  • 1 teaspoon salt 
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 8 whole wheat hamburger buns 

Instructions

  1. In a large bowl, using a fork or potato masher, mash half of the lentils or beans, keeping the other half whole.
  2. Mix lentils or beans, bell pepper, ground meat, and egg with your hands. Season with salt, pepper, and garlic powder.
  3. Form meat mixture into 8 patties.
  4. Heat a 12-inch skillet to medium-high. Sear patties until dark brown on one side, then flip them and sear on the other side to 160°F. 
  5. Serve on toasted buns with your favorite condiments.  
  6. Refrigerate leftovers in an airtight container within 2 hours.
