Ingredients
- 1 tablespoon oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1/2 pound chorizo or other sausage
- 1 (28 oz) can crushed tomatoes.
- 2 (15 oz) cans cannellini or navy beans, drained and rinsed
- 1 teaspoon Italian seasoning
- 3 cups cooked whole wheat pasta
Instructions
- In a large pot over medium heat, heat the oil. Add chopped onion and cook until translucent, about 5 minutes.
- Add garlic and chorizo, and sauté for about 5 minutes, or until it reaches 160F.
- Add tomatoes, beans, and Italian seasoning. Simmer until the sauce is thick, about 10 minutes.
- Serve over pasta or polenta
- Refrigerate leftovers in an airtight container within 2 hours.
