Chorizo and White Bean Ragu 

Adding beans to any dish adds fiber, protein, and important vitamins and minerals. Add any of your favorite seasonings to this recipe

Ingredients

  • 1 tablespoon oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced 
  • 1/2 pound chorizo or other sausage
  • 1 (28 oz) can crushed tomatoes.
  • 2 (15 oz) cans cannellini or navy beans, drained and rinsed
  • 1 teaspoon Italian seasoning 
  • 3 cups cooked whole wheat pasta

Instructions

  1. In a large pot over medium heat, heat the oil. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add garlic and chorizo, and sauté for about 5 minutes, or until it reaches 160F.
  3. Add tomatoes, beans, and Italian seasoning. Simmer until the sauce is thick, about 10 minutes.
  4. Serve over pasta or polenta
  5. Refrigerate leftovers in an airtight container within 2 hours.
