Peanut Butter Energy Bites

These peanut butter energy bites are the perfect on-the-go snack.

Servings: 9 (2 bites per serving)

Ingredients:

  • 1/4 cup peanut butter
  • 1/4 cup honey
  • 1/2 cup nonfat dry milk
  • 1/4 cup old fashioned oats
  • 3/4 cup crisp rice cereal, divided

Instructions:

  1. In a large mixing bowl, combine peanut butter, honey, and dry milk. Stir in the oats and 1/4 cup of the rice cereal. Mix until fully combined.
  2. Shape into 1-inch balls.
  3. Place the remaining 1/2 cup rice cereal in a large ziplock-style bag and crush with your hands or rolling pin.
  4. Place peanut butter bites in the bag and shake until they are covered with cereal.
  5. Store in an airtight container in the refrigerator.
